Mix-It-Up Overnight Oats

Whether you’re on a journey of eating healthier, or just looking to mix up your mornings with an easy breakfast option – I’ve got the answer for you! Mix-It-Up Overnight Oats are an easy, make ahead option that you can top with virtually anything in your pantry or fridge. They all utilize the same base that you make the night before and then in the morning you top with your add-ons and have a hearty, filling, healthy breakfast! I’ll walk you through how to make the base oats and my favorite ways to top them.

Ingredients

  • 1/4 cup oats [I used steel cut because I don’t enjoy the texture of old fashioned – but either would work]
  • 1/4 cup almond/coconut milk
  • 1T brown sugar
  • 1T nut butter
  • Splash of vanilla

*I double the recipe for my husband.

  1. Combine all ingredients into a container with a lid.
  2. Mix well and refrigerate overnight.
  3. Top with any mix of additions and enjoy! I eat them cold in the morning, but you can also warm them up.

Optional Mix-Ins

  • Fruit (apples, banana, strawberries, pineapple etc.)
  • Cinnamon
  • Nuts
  • Honey
  • Nut Butter of your choice
  • Chocolate
  • Chia

The options are endless depending on what you like and/or have in your pantry but here are a few of my favorite combos:

Peanut Butter Banana Oats

Peanut Butter Banana

  • 1/2 banana sliced
  • 1T coconut flakes
  • 1T chocolate chips
  • Drizzle of peanut butter
  • Drizzle of honey

Chocolate Covered Strawberry

  • 3-4 strawberries sliced
  • 1T coconut flakes
  • 1T chia seeds
  • 1T dark chocolate chips

Apple Pie

  • 1/2 diced and softened apple
  • 1t cinnamon
  • Drizzle of honey

Coconut Butterscotch

  • 1T coconut flakes
  • 1T butterscotch chips
  • Drizzle of honey
